Hot Water Kit & Thermal Cut-out

Hi all, just installing a new heating/ htw system and Evohome. We have a Jolues pressurised indirect cylinder with Baxi boiler and we want to control the hot water with Evohome

The cylinder is from Joules and comes with a dual thermostat for hot water control. One channel controls domestic hot water temp (c.60 deg) and the second channel I believe is the high temp thermal cut-out, preset at 85 deg +- 3 deg.

Current discussion with electrician is to remove the thermostat and insert Evohome probe into dry Aquastat pocket with heat sink compound. However I'm wondering if this is sensible given the 85 deg thermal cut-off is a safety feature. From what I understand this upper temp safety feature isn't available via Evohome?

So I'm wondering how others have approached this problem in their set-up. Couple of options I can think of

1) Use Evohome probe and cylinder thermostat together but wire just the cut-out from thermostat. Not sure this will work as the entry point in Aquastat pocket is tight and probably little space for probe wire to exit around neck/ collar of thermostat.

2) Don't install thermostat and let boiler upper temp act as safety cut-out. This doesn't seem sensible

Any advise from the wise greatly appreciated.
