Just last week did our Evohome install and all seems well.
Quick question. With our old controller, we had the hot water on for an hour twice a day and for 90% of the time this gives enough hot water for our family of 5 (Megaflo storage tank, and using a quick Boost for the 10% of time we had exceptional demand) Have currently got the Evohome set up the same
Am I right in understanding that I could use the Evohome set to "Permanent" and then the "Differential" offset will have the boiler kick in as the water is used and the tank temperature drops

Yes you can do this... I personally only turn mine on as a when its needed.
