Firstly, the 'hourglass' means there is a temporary loss of comms with the evohome Controller.

The crazy high temp is because the temperature sensor inside the evohome Controller is picking up your hand temperature as you are holding it and this has been assigned to the zone you are looking at (maybe instead of the correct temp sensor).

What is the Evohome using for the temperature measurement in the room? Is it the Evohome control itself or is it relying on the HR92 valve to report back to it?

If you could let us know we might be able to shed some light on it.
